My friend brought me to this place which is a few blocks away from the hotel where I was staying. I was hesitant at first because I was already hungry and I don't want to be far from my comfort zone since I am not familiar with the place and it's my first time in the City of Smiles. He gave me an assurance that my mood will be changed the moment I will get to taste the best Cansi in Bacolod City.
Sharyn's Cansi House is a low-profile restaurant and it's open to everyone. The place is so simple and is never intimidating.
When we were there, the waitress didn't ask anymore what we would like to eat. Instead, she asked us how many cups of rice are we going to order. Instantly, I just said one will do for me because I wasn't sure what are we going to eat.
While we were waiting for the food, I saw some certificates of recognition posted on the wall for being the best Cansi in town and that made me more curious on what is it all about.
When the order arrived and we started eating, I was lost in space and even lost for words because I have tasted the best fusion of bulalo and sinigang in one very delicious viand.

I can say that Cansi is the best of all because of its very tender meat and tendons. The meat is cooked for six long hours until it separates instantly from its bone...plus the bone marrow hmmm oh so yummy. Their secret ingredient is the Batuan seed that made it perfectly sour. My cup of rice was not enough and that made me ordered 2 more. It was amazingly delicious and yes, my mood was totally changed after we ate. The best!

Hmmm, quite expensive, but I'm sure it tastes great! I love sinigang and bulalo and this one is combined? Seriously! I'm glad that you get to try more foodie places Fred, go ahead and conquer! Haha :D
